Enlightened Granola Bar Recipe

2 cups low-fat granola
1/2 cup chopped fresh cranberries
1/4 cup chopped almonds
1/4 cup chopped dried apricots
1/4 cup shredded unsweetened coconut
1 teaspoon cinnamon
2 tablespoons monk fruit sweetener
1 teaspoon vanilla extract
2 egg whites

Preheat the oven to 350 degrees. Line an 8 inch square pan with aluminum foil so the foil hangs over the edges of the pan. Chop the apricots and the cranberries. Combine the first 7 ingredients. In a separate bowl, mix together the egg whites and the extract. Pour the egg whites and the extract over the dry ingredients and mix together. Then transfer into the pan. Bake for 20 minutes. Grasp the edges of the aluminum foil to remove from the pan. Let cool. Then cut into bars. The yellow apricots and the red cranberries make this look festive. Enjoy!
